What APIs does the Map component use? I need to know this for my app's privacy policy.

The Map component uses a server on MIT's campus in the default configuration; it is possible to use your own Redis server to connect to the osm tile servers.
The link to the Map tiles etc. is using various 'donated' servers provided by osm as @vknow360 mentions and https://api.openrouteservice.org/
