What is the difference between Tag and Valuetostore while creating a TinyDb?

For ease of my tired brain lets say i wish to save into this average hiking rating TinyDb these sources created one as text and one as a number:

name line/data source
age line/data source

Is it correct to say that:
tag would be the data line i wish to store eg i want to save all the name data as a tag?

valuetostore would be what?
